Grapes:

Grenache: 70%

Syrah: 30%

Terroir:

Sablet vines aged over 40 are located on hills overlooking the village Grenache (in clay limestone soil) and from the village for Syrah (basement-lime).


Vinification:


The selection of old vines are hand harvested and carefully sorted grapes. The entire cluster is then broken. The two varieties are vinified separately, maceration lasts 20 days with temperature control. The assembly is performed at the end of malo lactic fermentation.


Tasting Notes:


Beautiful purple dress, deep, clear, with purple highlights. The nose is intense, marked by notes of fresh red fruit, cherry and crushed strawberry, blackberry. In the mouth, one discovers a wine full of fruit and freshness, always on the red fruits, with a concentration of tannins already melted, and a nice length in the final.

Agreements cooking: red meat, leg of lamb.
