Grenache : 75 % - Mourvèdre : 20% - Cinsault : 5%
TERROIR
Gathered vines on 13 hectares in « Ratanaud » at the top of the hill which separates the Aygues valley from the Ouveze valley. Old vines planted in brown marls and covered with pebbles benefit from summer cooler nights due to the altitude (more than 360 m). Optimum sunshine from sunrise to sunset gives a constant maturity to berries. From those characteristics are born great wines "AOP Rasteau Notre Dame des Pallieres"
VINIFICATION
Gobelet old vines stocks are handpicked in full maturity. Brushing and vatting, macerating more than 30 days under temperature control, reassembling and relieving. Vat runs off, marc pressing takes place, we keep apart those presse wines which will be assembled with the spring "drop". 60% aged in concrete vat, 40% in french oak wood barrels (3 and 4 wines) ; These two cuvées will be assembled before bottling.
TASTING NOTES
Beautiful garnet robe with a fine intensity and a few amber reflections. An intense nose on spicy, black fruits and moka notes. The mouth is full, round, melted tanins, a fine length on ripe fruits notes.

Culinary agreements : red meat, small game, truffles, spicy dishes.
Service : 17 - 18°C
Cellaring : 5-8 years.
