TERROIR
Fourty years old vines in Sablet are located on the hillsides above the village for Grenache grapes on clay-limestone subsoil and near the village for Syrah grapes on sand lime subsoil.
VINIFICATION
Old vines are essentially handpicked with carefully sorted grapes, then all grapes are scraped. The two varieties are vinified separately in a twenty days lasting maceration with temperature control. The assembly is performed at the end of malo lactic fermentation.
TASTING NOTES
Fine and brilliant bright crimson color. Intense fresh fruit on the nose with cherries, blackberry, red fruits coulis. A round, fleshy and crispy palate full of fruits with no hardness and silky tannins.
